Using Midi-Ox to chenge Note-On/Note-Off messages

I'm really new to this. I just downloaded Midi-Ox, and am not exactly sure how it works.
 
I want to use Midi-Ox to capture the Note-On/Note-Off messages from the top two notes on my MIDI pedalboard, change them to Program Change messages, and send them to my Hauptwerk v1 virtual organ to advance and dexcrease the frames to change saved stop combinations.
 
I think I understand how to create the MAP, but I'm not sure how to get the changed messages through to the Hauptwerk Organ when it is running. (When Midi-Ox is running, Hauptwerk doesn't seem to be able to load an organ properly).
 
This is probably pretty basic, but I really  need help. If someone could lay out for me, step by step, what I have to do, I would be eternally greatful.
