Connecting JV-1010

I have a Roland JV-1010 and wish to use it with a Yamaha Ar100 Organ. The AR100 transmits Expression cc11 on channel 16 but does not transmits volume cc7 on any channel. The AR100 uses three channels 1, 2 & 3 respectively for upper/lower/pedal keyboards. If I map the cc11 ch16 to cc7 of channels 1, 2 & 3 the Midi Ox only works for one channel (by default ch1). How do I get the Midi Ox to transmit to all three channels so that I can use the expression pedal to control the overall volume on all channels simultaneously. Thanks in anticipation.

MIDI OX does only do one mapping unless you tell it you want the original message passed on. (Not really anything to do with only one channel.) If you do that, you can keep adding additional mappings until you've created all the output messages you want from your input message. (You can even have your original input message continue on intact.)
