if you turn on the midiox keyboard function you can play your keyboard like a piano - is there a way to record or capture the midi notes you play and make a midi file that saves your sounds?

Yes - but not in MIDI OX (AFAIK). You need a sequencer. Route the MIDI notes into the sequencer, then back out to the sound module. When you want to record, hit record in the sequencer. The sequencer will be able to write MIDI files. There are very, very many sequencers at a range of prices, including free. Do a google search ("MIDI sequencer").
