Is there a way I can play a MIDI instrument live using a SoundFont within MIDI-Ox? How would I set it up to do this?

First, be warned that the amount of latency you'll get with the "GM Synth" virtual MIDI ports you get with Windows will mean live play is probably impossible. You really need a proper Soundfont player (like rgc:audio's sfz) and ASIO drivers. Using a "built in" player is like this: [MIDI In port] -> [MIDI OX] -> [MIDI Out port] where "[MIDI Out port]" is the "GM/GS Synth" or whatever. Using a player like sfz doesn't need MIDI OX, as you just open your MIDI In port in the player.
