how can I configure my Yamaha EZAG to send notes of all the strings on channel midi1????

Does the EZAG have a manual that explains how to configure the MIDI channel?

If not, you could use MIDI OX and MIDI Yoke:

AG MIDI Out -> PC MIDI In
PC MIDI In->MIDI OX, Data Filter to change channel number
MIDI OX->MIDI Yoke Out 1
MIDI Yoke Out 1->(wherever)
